Duck Breast with Admiral Gin Ale

Our boyfriend @marcantoine.moreau @marcochefadomicile made us a recipe for Magret de Canard featuring our Gin Ale! 😎


  • 2x duck breast
  • Admiral Gin Ale
  • 100 ml honey
  • 100 ml soy sauce
  • 100 ml Gin Ale
  • 1 tbsp 5 spices
  • 1x butternut squash
  • Q.S Olive oil
  • 1x Q.S butter
  • 2x apples (cortland, empire, spartan)
  • Q.S butter
  • Q.S 5 spices
  • 1 can chickpea
  • Canola oil
  • Q.S salt/pepper


- In a saucepan, combine honey, soy sauce and Gin Ale. Over high heat, reduce the lacquer to a smooth consistency.

- Preheat oven to 375C. Cut squash lengthwise into 2 pieces and place on a baking sheet lined with parchment paper, cut sides up. Brush with olive oil, salt/pepper and bake for 45min or until tender.

- Melt butter in a saucepan over high heat until the butter turns a nutty color. Remove from heat quickly. Remove the flesh from the squash and place in a food processor with the desired amount of beurre noisette. Puree and season.

- Peel apples and cut into quarters. Put butter and olive oil in a hot frying pan and add the apples. Brown the apples. Add a little 5 spice at the very end. Set aside.

- Heat the canola oil in a pot to 350F. Rinse chickpeas well, pat dry and place in oil until crisp. 10-15 min.

- Preheat oven to 400F. Remove excess fat from around duck breast. Make squared cuts in the fat. The closer the lines, the crispier the fat. Season the duck and place skin-side down in a cold pan. Then start the round on a very low heat, allowing the fat to melt without browning from the outset. As the fat melts, remove it from the pan. When the fat is well melted, increase the heat to color the skin. Quickly brown the flesh side, then place skin side up in the oven for 5-7min. Leave to rest for 7min.

- While the duck is cooking, heat and reduce the Gin Ale lacquer again. Once the duck has been removed and rested, place it in the sauce until it is nicely lacquered, black and shiny.

- Cut the duck breast lengthwise and arrange on its side, so that you can see how well cooked it is. Spoon on the mashed potatoes, arrange the apples on top and finish with the fried chickpeas.
